Confession, until I met my husband and was introduced to his parents I had never had beef stew. My husband found this dish to be comforting, and his ultimate comfort food. So naturally, my inner Donna Reed had to learn how to make comforting beef stew.
Winter Comfort Food
I must admit that I have always been a little jealous of my husband’s upbringing. Unlike myself, he has memories tied to incredible food. Dishes such as Hawaiian Chicken, Beef Stew, Pork Chops with Applesauce, the list goes one.
Thankfully, because of him and my amazing mother-in-law, I now have these foods to fall back on when I need the winter comfort food vibe.
By the way, it wasn’t that my life was rough growing up, my mother is European and she doesn’t know how to cook. She grew up in a home where she didn’t have to.
Comforting Beef Stew
Now, this dish is not my favorite or first choice but I love its warmth and the feeling of just being hugged when I make it and eat it. The added bonus is this is the ultimate winter comfort food.
My mother-in-law is no longer with us and the main reason I make this dish for my husband is that it feels as though she is with us, and she is happy we are enjoying this simple recipe.
